This revelatory restaurant treats ramen-making as autobiographical performance art: Self-taught chef Masuo Onishi will operate Tsurumen for only 1,000 days, and after 1000 days, what is he going to do? Masuo is one of my Japanese podcast guests, and we are going to establish a start-up company.
