In the heart of Amsterdam, as dusk settled on the city, the night before the renowned Biohacker Summit of 2023 unfurled a dining spectacle unlike any other. The sanctity of the evening was further elevated when Zen Takai, a 16th-generation samurai, solemnly purified the venue with his ancestral sword, his motions harmonizing with the ethereal tunes emanating from Yogetsu Akasaka's handpan.
Teemu, the charismatic host, ushered the evening into full swing with a hearty welcome. The opening ceremony was imbued with a touch of the Land of the Rising Sun, as I had the honor of orchestrating a Japanese-style inauguration. The tranquility of a traditional tea ceremony conducted by my wife, with the honor of serving matcha to Zen Takai while Yogetsu's handpan reverberated through the venue, was a sight to behold.
As appetizers rolled in, Momoe, my esteemed former podcast guest, guided the VIPs on a journey of Zen eating, turning every bite into a mindful exploration, a pause, and an acknowledgment of the journey from farm to table.

The six-course dinner was a collaborative endeavor, mirroring a lively TV cooking show, yet with a dash of earnest exploration. As we, along with the speakers, donned the chef’s hat in separate kitchen teams, the venue turned into a bustling hive of culinary creativity.

The menu was a curated journey through diverse textures and flavors - from the earthy Wild Mushroom Tabbouleh, the robust Reindeer Bone Broth with Seaweed and chili, to the delicate Wild Halibut paired perfectly with a citrus hollandaise.
