Fall is always the best season because food are so seasonal and delicious. How is everyone? I train so hard on weekdays and enjoy eating a little bit on weekend. Gibier and wine dinner are my favorite weekend activity.

Monkfish Risotto
I found monkfish at weekend market in Boston. $2.50 per pound. What a joke! monkfish is tasty in winter beacuse it is in season, but I don't care when I have. This is my "catch of the day"
Summer Vegetables Curry
ummer vegetables are so tasty! Its in the season now! I made curry dish for dinner. I got chicken, tons of veges and right amount of brown rice.
Beef achilles
This was my last weekend meal. What do you think? You think stew or something? Yes, this is beef achilles. I stopped drinking alcohol because of my next fight coming up, so couldn't drink red wine with this mouth watering dish... I miss a nice glass of wine.
Choux farci au Saumon (Salmon stuffed Cabbage)
You can see my main dish above. This one is my favorite dish from French movie “Haute Cuisine”. I watched the movie in an airplane on way back to U.S. The main character, the first woman chef for the French president, was cooking this stuffed cabbage. I was watching cooking scene and slobbering in from of a monitor.
Chicken with Avocado Pesto
Pesto is my favorite! It is tasty and useful. More than anything, it has amazing flavor.
Get some bunch of basil at grocery and follow my recipe and keep them in your fridge.
When you keep them, make sure basil stays away from heat.
Manitas de cerdo guisadas
Injury recovery food.
Ligament doesn't have much blood supply, so it takes for a while to heal by itself.
Do I need more collagen? I think I do and don't care how collagen intake works or not. I cook collagen rich meal and try to recover faster!
Fiber Madness Marinara Sauce
How do you like Tech's marinara sauce?
Oh boy...lots of vegetables in this sauce... can you see that?
I usually make this sauce on weekend for stock. You can make it thicker for pizza or lasagna sauce. Some people think that takes too much time to make it. Well, you cut veges and put them in kitchen ready whole tomato then you will get tomato soup.

I had a great dish last week. This is my original one. Pumpkin carbonara!
This is super easy. you just add pumpkin paste to carbonara.
Pate de Fois
Would you try some chicken liver?? You never know how tasty it is. This is one of my favorite tapas dishes. I went to Paris a couple weeks ago, and I just feel like cooking this. Somehow I miss this thing. Anyway, the point is good preparation for liver!

Semana Negra (means "Black week") festival took place in Gijon, and I had this dish at food stand of the festival.
Lemon Garlic Pasta with Chicken, Red and Green
I love italian color. Green and Red. What nice color. This dish is not only colorful, but very nutritious! You can use broccoli instead of avocado. I would recommend cutting chicken into big size. You cook chicken slowly, so it gets better taste. Make sure you don't overcook avocado, otherwise it gets bitter.
Shrimp and Eggplant with Spicy tomato
Tech's pasta is back!
This dish is one of my favorites. Great combination!
The key point is how you cook shrimp. You want chewy and tender shrimp.
Black ink Pasta with Shrimp and Scallop
I picked leftover in my freezer and put flour on seafood because it makes those surface nice and crispy.
You cook surface and make those dark brown, and then cook inside completely with flambé.
Lobster Pasta with Tomato Cream Pasta
This dish was for July 4th I made.
