My ex-student, Arthur and his wife Natsumi visited us in Boston. It has been almost 2 years since we saw each other. Now we got kids as parents! I am so happy to see his kid and get together.

The meal began with an appetizer of Spring Vegetables in Jelly, which consisted of cauliflower, asparagus, and radish suspended in a light and refreshing jelly made from vegetable stock. The texture of the jelly provided a perfect contrast to the crunch of the vegetables, making for a truly delightful dish.

For the main course, I prepared Linguine Primavera with Homemade Guanciale. This flavorful pasta dish featured homemade salted aged pork cheek meat, as well as artichoke and fiddlehead ferns, two seasonal vegetables that added a delicious and unique flavor to the dish. The homemade guanciale was the perfect addition, adding a rich and savory taste that truly elevated the dish to the next level.

Undoubtedly the star of the meal was the Rice Malt Marinated NY Strip Steak. The grass-fed, grass-finished beef was marinated in a mouthwatering blend of rice malt, which is a traditional Japanese ingredient made by fermenting rice with a special kind of mold.

The marinade is the key to the steak's uniquely delicious taste, with a perfect balance of slightly sweet and sour flavors, enhanced by the umami flavor of the rice malt. The result is a steak that is not only flavorful and juicy, but also boasts a deep, rich taste that perfectly complements the other dishes on the menu.

To finish off the meal, I served a homemade Vanilla Coconut Ice Cream that was organic, dairy-free, and sweetened with raw honey. The smooth and creamy texture of the ice cream provided a perfect ending to the meal, with just the right amount of sweetness to satisfy any sweet tooth.
